Bikini Friendly Blueberry Protein Muffins

As a nutritionist one of the questions I get is on the topic of snacks. While I prefer my lovely clients to eat fresh fruits, vegetables and whole foods for their meals… there is no denying that sometimes you need to mix things up during snack time! I recently sat down to recreate a few classic recipes with a healthy twist.

We deserve to have our muffins and wear a bikini too! I am here to serve you with a protein fueled treat that tastes like your favorite breakfast pastry without all the unhealthy ingredients!

In the pursuit of staying on track with health goals sometimes a girl needs a break from the mid-day fruit and almonds. Snack time can be fun, flirty and low-calorie too!

Grab a few mini muffins for a mid-day treat, post workout or when you’re hankering for a sweet treat and enjoy!

INGREDIENTS

  • ¾ cup almond meal
  • 1 cup organic blueberries
  • ¾ cup vanilla plant-based protein powder (VEGA protein powder is my favorite)
  • 2 tsp. cinnamon
  • 1 tsp. baking powder
  • ¼ tsp. sea salt
  • flax egg (see below for details)
  • 1 tsp. vanilla extract
  • ¾ cup unsweetened almond milk
  • 1 mashed banana
  • 10 drops of liquid stevia
  • coconut oil spray

DIRECTIONS

STEP 1: Preheat oven to 350 degrees.

STEP 2: Make Flax egg. Mix 2 tablespoon ground flax or chia seeds with 6 tablespoons water. 

STEP 3: Combine all of the dry ingredients in a bowl.

STEP 4: Combine all of the wet ingredients, including bananas, in the blender and blend until smooth.

STEP 5: Add wet ingredients to the dry ingredients (blueberries) and mix to combine.

STEP 6: Spray a mini muffin tin with coconut oil spray. Pour batter into the muffin tins. Bake for 20-25 minutes, or until a toothpick comes out clean. Top with a little extra sprinkle of cinnamon.
